In my research, I found a promising area in the Workspace preferences:

Windows->Preferences->C++->New CDT Project Wizard->Makefile Project

However, this property page/dialog appears buggy, it won't save changes and now when I open it I get a message saying 
that it contains invalid values.  When I try to get to it a second or third time, I get a Java NULL pointer exception.

There appear to be a lot of errors/issues being reported.  I've attached the log file, I hear reading them helps cure 
insomnia :)
